Winter warmer: Tartiflette
Tartiflette is the perfect antidote to cold weather. This traditional Savoyard dish is essentially a potato, bacon and cheese gratin and is super easy to make (we usually use this recipe on BBC.com).
It is important to keep in mind though that the magic of this simple dish comes from using the Right kind of cheese – Reblochon de Savoie, to be exact.
There are two kinds of Reblochon de Savoie:
1. Dairy-produced Reblochon carries a Red stamp on the rind.
2. Farm-produced (fermier) Reblochon carries a Green stamp on its rind.
The fermier variety is by far the more flavoursome out of the two in our experience. Happy Tartiflette time!
