Rancio Sec, Domaine des Schistes
This wine offers a captivating blend of flavours, including honey, curry, rich florals, and ripe fruit. Its texture in the mouth is supple, rich, and highly pleasing.
This dry IGP Rancio originates from grapes cultivated in an Organic Farming environment since 2010. It is primarily crafted from Grenache Blanc grapes, with a touch of Maccabeo. The vineyard boasts approximately 60-year-old vines, and manual harvesting occurs when the grapes reach full ripeness (around 15°5 alcohol content).
The aging process takes place in wooden barrels under oxidative conditions (barriques not topped with oil), using the "solera" method across three levels. The initial wine was introduced in 2004.
The resulting wine is exceptionally complex, featuring nutty undertones and just the right level of acidity.
Pair it with complex mountain cheeses, such as mature Comte and Appenzeller.
Grenache Blanc (95%) and Macabeo blend from 60 year-old vines.
