An unusual and memorable soft cheese from Scotland.
Paddy's Mile Stone is a farmhouse cheese, invented and produced by Ann Dorward at the Dunlop dairy.
It is a bloomy rind cheese (similar to brie on the outside) and is made from pasteurised cows' milk and vegetarian rennet. On the inside, however, it has got a fluffy/flaky textured paste, unlike brie. The flavour is buttery and mushroomy.
