Paddy's Mile Stone is a farmhouse cheese, invented and produced by Ann Dorward at the Dunlop dairy. It is a bloomy rind cheese (similar to brie on the outside) and is made from pasteurised cows' milk. On the inside, however, it has got a fluffy/flaky textured paste, unlike brie. The notes in the flavour are mushroomy and buttery.
Elegant red wines or craft cider would complement this cheese nicely.
