Our Cabrales is artisanally produced from raw cows milk sourced from herds grazing in the mountain areas that in the summer take advantage of the abundant summer pastures at high altitude.
Cabrales delights with its strong spicy taste and dense creamy consistency. It is matured for a minimum of 5 months in natural caves in the limestone mountains.
A sweet sherry like Pedro Ximenez or a sweet dessert wine like Maury from Domaine Lafage will be the best companions for this powerful blue.
Due to the relatively small scale of our cheese and condiment producers, occasionally some cheeses and condiments may be unavailable and we will have to substitute them with similar products. Please state in the notes on the Cart page, if you do not wish to have any substitutions.
