Basajo is a decadent wine-soaked blue cheese made from raw ewes' milk in Veneto, Italy.
The wheels spend about 3 weeks bathing in a sweet wine from Sicily, which infuses the paste with heady honeyed notes. Basajo seduces with its velvety texture and mellow fruitiness, without the saltiness and strong bite.
Accompany this artisan cheese with ripe pears and a dessert wine with a comparably full body, such as Sauternes or Passito di Pantelleria.
