About the Cheese

Formaggio Ubriaco Rosso is the famous wine-washed cheese from Veneto, Italy.

This firm cow’s milk cheese is wonderfully aromatic, full of sweet fruity notes, and finishes with a lovely winey bite.

The name "Ubriaco," meaning "drunken," refers to the process of bathing the young cheese in barrels with crushed grapes. This bathing process, which can last up to six months, gives the cheese its distinctive purple rind and overt fruitiness.

This cheese is a highlight of our Italian Selection. Enjoy Formaggio Ubriaco Rosso with fruity white, rosé, or red wines for a delightful pairing experience.

Cheesemaker: La Casearia Carpenedo

La Casearia Carpenedo is renowned for its innovative approach to cheesemaking, transforming high-quality products into unique and unforgettable delicacies. Antonio Carpenedo, along with his sons Ernesto and Alessandro, are masters of affinage — the art of cheese aging.

Known globally as innovators and guardians of this craft, they have developed the Carpenedo Method, a set of processing procedures honed through years of experimentation and refinement.

The Carpenedo family's journey began in 1961 in the Veneto region when young Antonio started helping his father in a local grocery store specialising in cheese.

Over the decades, Antonio’s passion and creativity led to numerous innovations, including the creation of Ubriaco.

Today, Casearia Carpenedo continues to be a beacon of modern cheesemaking, exporting their exceptional products to over 30 countries worldwide while maintaining a deep respect for traditional techniques and raw materials.
