This gorgeous little mount of cheese is made from pure raw goats’ milk by a handful of farmers in Burgundy. The shape is a tribute to the famous hill of Vezelay, one of the major starting points for the pilgrims on the Way of St. James to Santiago de Compostela.
The paste is smooth, mousse-y and mouthcoating. The rippled skin adds a decorative touch and a nutty hint. Burgundian whites will be the most appropriate companions for this cheese, but so will most crisp white wines.
