About the Cheese

Valdeón Cheese is a testament to artisan tradition and meticulous craftsmanship.

Made from a blend of fresh cow's and goat's milk, enriched with penicillium roqueforti and a unique starter culture, each wheel undergoes a labour-intensive process. The curds, formed to hazelnut-sized perfection, are drained of whey, which feeds local livestock.

After absorbing the distinct essence of rock salt, the cheeses rest and are meticulously dried to enhance their character. Pierced on day four to activate the penicillium, they mature gracefully for over 45 days in the natural caves of the limestone mountains.

Wrapped in sycamore leaves, Valdeón Cheese develops rich mushroomy and spicy notes, delivering a distinctive and robust flavour experience cherished by cheese connoisseurs.
