Valdeon Cheese: Crafted with Passion
With minimal automation, Valdeon's production process is a labour of love. Fresh cow's and goat's milk, pasteurised and enriched with penicillium roquefortium and a unique starter culture, is curdled naturally with rennet.
Hazelnut-sized curds are formed, and whey, a gift to a local farmer's pigs, is drained. The curds rest, absorbing rock salt's distinct essence, before a drying room enhances their character. On day four, the cheeses are pierced to activate the penicillium.
Over 45 days, Valdeon cheeses mature gracefully on their sides, inviting a gentle airflow to refine their flavour.
Hand-wrapped in sycamore leaves, Valdeon Cheese is a testament to tradition, craftsmanship, and dedication fully of mushroomy and spicy notes.
