Vacherin Friboureois: The essential ingredient of the classic Swiss fondue (Moitie-moitie)
Mentioned in the earliest records of fondues about 1,000 years ago, this cheese is one of the two essential ingredients for a successful Swiss fondue (the other one is Le Gruyere).
Today it is made by only a handful artisan cheesemakers who find it hard to justify the effort that goes into making a genuine Vacherin Fribourgeois - therefore it has become something of an endangered species.
The paste is light cream colour and very smooth, often with small eyes. The aroma and flavour are pronounced, underpinned by a consistent milky character, fresh cut hay and nuts.
