About the Cheese

A gorgeous artisan cheese from England, reminiscent of the famous Vacherin Mont d'Or.

Rollright is made by David Jowett using the organic milk of Manor Farm in Chedworth, 800 feet up in the Cotswolds. He crafts this stunning, memorable cheese from a mixed herd of British Friesians and Dairy Shorthorns.

Luxuriously rich, creamy and silky, Rollright is inspired by the soft washed-rind cheeses of the French and Swiss Alpine regions, such as Vacherin Mont d'Or and Vacherin du Haut-Doubs.

The cheese is repeatedly washed during maturation, and the whole round is bound with spruce bark. The resulting flavour is soothingly nutty, buttery, and piney. It’s worth waiting until the cheese is fully ripe to enjoy its best flavour and consistency.

About the Cheesemaker: King Stone Dairy

King Stone Dairy, located in the heart of the Gloucestershire Cotswolds at Manor Farm Chedworth, is a small-scale, quality-focused farmhouse cheesemaking business committed to supporting regenerative agriculture.

Founded by David Jowett, the dairy produces handcrafted cheeses using organic cow’s milk from a single herd of British Friesian and Dairy Shorthorn cows grazing diverse herbal pastures.

David’s journey in cheesemaking spans across prestigious roles, including at Paxton & Whitfield, Berkswell, Neal’s Yard Dairy, and Stichelton, before establishing King Stone Dairy in 2015.

Burford, his latest creation, is a testament to his deep understanding of farmhouse cheesemaking, celebrating British terroir and the rich, aromatic flavours of grass-fed summer milk.

Through his commitment to artisanal methods and sustainable practices, David has crafted a cheese that continues to impress and inspire, winning accolades and finding a place on cheeseboards far beyond the UK.
