An off-the-beaten track artisan goat's milk cheese from Spain.
Payoyo is made with pasteurised goats’ milk from the rare breed Payoya goat, indigenous to the mountain pastures of the Sierra de Grazalema.
The paste is semi-firm, dense and smooth on the palate. The aroma is of fresh flowers with hints of white chocolate and sage in the flavour. It's a bit of a crowd-pleaser and may surprise who are not too fond of goat's milk.
Enjoy Payoyo with medium bodied white or light red wines.
