About the Cheese

An iconic cheese from northern France, renowned for its distinctive appearance and rich flavour profile.

Crafted to a traditional recipe similar to Dutch Edam, this Mimolette matures for a minimum of 13 months to develop its unique character. Its striking exterior is marked by uneven surfaces and small craters, revealing a vibrant orange hue that comes naturally from annatto, sourced from South American shrub seeds.

As Mimolette ages, it transforms into an extra mature masterpiece, boasting a hard texture and complex flavours of sweet butterscotch and nuttiness.

This cheese is a testament to artisan expertise and meticulous aging, making it a delightful pairing with medium-bodied red wines, whisky, or craft beers.

Cheesemaker: Isigny Sainte-Mère

The story of Mimolette at Isigny Sainte-Mère dates back over a century, rooted in a cooperative spirit dedicated to quality and tradition.

Established in 1909 in Chef-du-Pont, this cooperative initially produced Gouda and Edam cheeses, shipping them across France and beyond via a nearby railway line.

In 1951, Mimolette, affectionately known as "Boule de Lille," found its place within Isigny Sainte-Mère's repertoire, thanks to the expertise of Master Cheesemakers recruited from northern France.

Today, the Isigny Sainte-Mère Cooperative continues to uphold its legacy of excellence, meticulously crafting Mimolette cheeses that meet stringent quality standards. The cooperative's commitment to sustainable practices and the preservation of Isigny's terroir ensures each cheese embodies the rich history and superior craftsmanship that define Isigny Sainte-Mère.
