Gudbrandsdalen, also known as Gjetost, is the famous Norwegian "toffee cheese".
During the cheesemaking process the curd is "cooked" to a much higher temperature, than for other type of cheeses. This scalding process caramelised the sugars present in milk creating a fabulous toffee-like flavour.
Sweet rennet whey (milk), pasteurised goats' milk, pasteurised cream (milk) and milk. Concentrated by boiling.
