The most famous stinky cheese from France!
Made from raw cows’ milk, artisan Epoisses are hand-ladled into forms and left to drain. During the maturation the cheeses are washed with a salty brine and aged for 4 weeks in a humid cellar.
At 4-weeks-old all Epoisses get washed with Marc de Bourgogne which greatly contributes to the taste and aroma of this cheese.
When Epoisses is fully ripe, its paste becomes incredibly gooey and even runny, whereas the flavour is nice and meaty with an overt salty edge to it.
This aromatic cheese should be matched with an equally aromatic wine, like Gewurztraminer
