According to the Auvernat, this classic French blue cheese was the predecessor to the famous Roquefort. True or not, it is a truly delicious treat for blue cheese lovers. The texture is firm but still lusciously creamy with engaging spicy lingering flavour. Best enjoyed accompanied by a glass of Sauternes, port or Madeira.
