Roquefort, also known as The King of Blues, was awarded it AOC status in 1925. To qualify the wheels have to be made from raw Lacaune ewe’s milk. After making wheels are held in selected dairies for 10 days, and then placed for aging in the natural caves of Mount Combalou. This superb Le Vieux Berger Roquefort is a revelation: well-balanced flavour is spicy, rich and tangy, the paste is crumbly but smooth and is full of deep pockets of blue.
Roquefort goes with Sauternes like bread goes with butter.
