A well-known farmhouse cheese made with milk from the farm’s own herd of Friesian and Kerry cows. During aging the cheese is regularly washed in brine which helps it develops a distinctive orange rind and wonderfully pungent aroma. The smooth semi-firm paste is sweet slightly herbal with a meaty finish.
