Husband and wife team, Louis and Jane Grubb, make this distinctive full-fat blue cheese from the rich milk provided by their pedigree Friesian cows. The cheese has a lusciously creamy texture. It’s well marbled with blue moulds which have a nutty, slightly sweet and earthy taste. Because the cheese matured in the coolest part of the cellar with high humidity it develops an almost melting consistency.
