About the Cheese

Vacherin Fribourgeois is the essential ingredient for the classic Swiss fondue and one of the most endangered artisan cheeses.

First mentioned in records of fondues about 1,000 years ago, this cheese is now made by only a handful of dedicated artisans, making it a rare and treasured delicacy.

The washed rind imparts a farmyard aroma, while the deep cream-coloured paste is smooth with occasional small eyes.

Its flavour is intense, featuring sweet milky notes with underlying nutty and even chocolatey nuances.

Enjoy Vacherin Fribourgeois with medium-bodied red wines, craft ales, and even whisky.

Cheesemaker: Marc-Henri Horner

Mr. Horner is a master cheesemaker with a steadfast commitment to producing the finest cheese possible. His Vacherin Fribourgeois holds its own on any cheeseboard, offering an earthy flavour with a delicate richness.

Mr. Horner values high-quality milk from local farmers within a 3 km radius of his dairy, where generations have cultivated exceptional meadows. This milk, enriched by diverse flora, is perfect for Vacherin Fribourgeois AOC and Gruyères AOC. The farmers' dedication to their Holstein and Red-Holstein herds ensures superior milk quality, essential for producing outstanding cheese.

Despite economic pressures and a decline in active farms in Switzerland, Mr. Horner's dairy supports traditional agriculture and sustainable incomes for local producers. Modern infrastructure may have changed the farming landscape, but the quality of the land and crops remains crucial. Farmers adhere to strict integrated production standards, ensuring environmentally respectful practices and high-quality products, preserving traditional methods and guaranteeing exceptional cheese for consumers.
