About the Cheese
Yarlington is a refined, cider-washed cheese created through a collaboration between David Jowett, Tom Oliver and Sam Wilkin. Inspired by classic Alpine styles, it sits neatly between Evenlode and Rollright in its make, combining supple texture with layered flavour.
The rind is gently washed in brine and Yarlington Mill 2019 cider, named after the Somerset orchard where the Yarlington Mill apple was first discovered, now a cornerstone of British cider making. The cider, matured for 18 months in Speyside whisky oak barrels, brings subtle fruity, smoky and spicy notes.
Silky and velvet-smooth, Yarlington offers rich umami flavours with autumnal, wild notes, hints of cooked ham and a gentle farmhouse tang. As it matures, the cider wash comes forward, adding green apple skin freshness and a touch of oakwood smokiness.
Made in Gloucestershire with Herefordshire cider apples, Yarlington is reminiscent of Reblochon, yet unmistakably British. A confident, complex cheese that rewards slow enjoyment.
About the Cheesemaker: King Stone Dairy
King Stone Dairy, located in the heart of the Gloucestershire Cotswolds at Manor Farm Chedworth, is a small-scale, quality-focused farmhouse cheesemaking business committed to supporting regenerative agriculture.
Founded by David Jowett, the dairy produces handcrafted cheeses using organic cow’s milk from a single herd of British Friesian and Dairy Shorthorn cows grazing diverse herbal pastures.
David’s journey in cheesemaking spans across prestigious roles, including at Paxton & Whitfield, Berkswell, Neal’s Yard Dairy, and Stichelton, before establishing King Stone Dairy in 2015.
Burford, his latest creation, is a testament to his deep understanding of farmhouse cheesemaking, celebrating British terroir and the rich, aromatic flavours of grass-fed summer milk.
Through his commitment to artisanal methods and sustainable practices, David has crafted a cheese that continues to impress and inspire, winning accolades and finding a place on cheeseboards far beyond the UK.
