About the Cheese
Berner Hobelkase is one of the rarest Alpine cheeses, crafted with time-honoured traditions and produced in small quantities during the summer months.
Made from the milk of cows grazing on the breathtaking alpine meadows of the Bernese Alps, where the fields are rich with wild grasses, flowers, and herbs, this cheese carries the essence of its pristine surroundings.
The wheels of Berner Hobelkase are traditionally made in copper vats over an open fire and are matured for at least 12 months.
Our particular batch has been aged for nearly 3 years, resulting in a flavour that is intensely rich with sweet, caramelly notes.
The texture is hard and smooth, adorned with small protein crystals that provide a delightful crunch.
Berner Hobelkase is a true testament to the art of cheesemaking and a rare delicacy that reflects the purity of its alpine origins.
About the Cheesemaker: Berner Alp Families
The cheesemaking journey for Berner Hobelkase takes place high in the Bernese Alps, where several families dedicate their summers to producing this extraordinary cheese.
The alpine meadows, located at 1500+ meters above sea level, offer an abundance of diverse herbs and grasses that contribute to the rich and flavourful milk used in cheesemaking.
Each summer, the families move to the alpine chalets, where they work together to craft and care for the cheese, often in the same room where the curds are formed in large copper vats.
The cheesemaking process is a family affair, passed down through generations and carefully preserved in this remote, scenic region.
With the onset of the pandemic, the families have embraced a direct-to-consumer approach, offering their prized cheeses through a self-service hut that allows visitors to purchase fresh cheese straight from the gate. This unique connection between the land, the people, and the cheese creates an authentic, unforgettable product, with every wheel of Berner Hobelkase AOP bearing the mark of tradition and dedication to quality.
