About the Cheese

Anster is a farmhouse cow's milk cheese made in Fife, Scotland, by St Andrews Farmhouse Cheese Co.

Crafted using raw milk from their home-bred herd of Holstein Friesian cows, which graze the fields overlooking the Firth of Forth, this firm, crumbly cheese boasts a slight tang.

Made by hand using traditional techniques and based on a Cheshire recipe, Anster offers wonderfully fresh, milky notes and a lively zing.

Its gentle, fresh flavours of lemon peel and natural yoghurt sharpness culminate in a full-flavoured acidic finish.

Enjoy Anster with crusty fresh bread and your favourite craft cider, or for an extra special treat, pair it with fruitcake.

Cheesemaker: St Andrews Farmhouse Cheese Co.

St Andrews Farmhouse Cheese Co. is run by the Stewart family, who have farmed at Falside in the East Neuk of Fife for more than 50 years.

The farm, now managed by Robert Stewart and his wife Jane, along with their sons Ben and Adam, has been producing cheese by hand from their own Holstein cows since 2008.

The cows graze on lush green pastures overlooking the fishing village of Anstruther, known locally as Anster. The farm employs traditional farming methods, ensuring the cows are predominantly grass-fed, supplemented with silage, and homegrown wheat and barley.

The Stewarts' dedication to their land and animals is evident in every aspect of their farming and cheesemaking practices, making Anster cheese a true reflection of the rich and diverse food culture of Fife.
