About the Cheese
Pevensey Blue, a newcomer to the British blue cheese scene, offers the creamy richness and complex flavour reminiscent of Gorgonzola Piccante.
Crafted with organic milk from Court Lodge Farm cows grazing on the Pevensey Levels, this cheese is handmade by Martin and Hazel in their micro-dairy.
Awarded Supreme Champion at the 2022 Artisan Cheese Awards, Pevensey Blue is quickly gaining acclaim. Its dense and smooth texture pairs beautifully with complex red and dessert wines.
Cheesemaker: Martin and Hazel Tkalez
Pevensey Cheese Company Limited is co-owned by husband-and-wife team Martin and Hazel, alongside the farmers David and Marian of Court Lodge Farm.
Martin, a former Neal’s Yard Dairy cheesemonger, turned to cheesemaking to create something handmade and memorable. He trained with the Trethowan Brothers before establishing Pevensey Cheese Company. Hazel, with a background in farming and food, joined him, inspired by his passion for cheese.
David and Marian, who have farmed organically since 1998, provide the rich, high-quality milk from their herd that grazes the National Nature Reserve of the Pevensey Levels. Their sustainable farming practices support biodiversity and the wellbeing of their cows.
The cheese is made in small 60kg batches, ensuring meticulous attention to detail from fresh milk collection to the final maturation process.
