Records show that Mahon has been traded in the Mediterranean since about the 13th century. It's matured by skilful afinadores who rub the cheese with butter, paprika and olive oil. Wonderfully versatile cheese - excellent for both snacking and cooking. Enjoy with some white wine of choice, fino sherry or even beer.
