Made from a mix of thermised cows’, goats’ and sheeps’ milk. The texture is dense but still quite velvety and creamy. Underneath its paper-thin bloomy rind we find moist, cakey, palate-coating paste with herby flavour and lactic tang. The paste is decadent and melting from the outside in. An ideal regional pairing would be a sparkling Asti Spumante; you can also try it with any other sparkling wine or light crispy white wine.
