About the Cheese

A wonderfully aromatic artisan cheese from Lombardy, Italy, Taleggio has been cherished since the 10th century. It is a semi soft PDO cheese made from whole cow’s milk, carefully refined with passion in Pasturo, in the heart of Valsassina.

Known for its refined qualities, Taleggio remains one of the most renowned Italian cheeses today. It comes in a distinctive square shape with a bright orange rind and bone white interior.

The semi-firm paste offers a luxuriously creamy texture and a flavour profile that is milky with a slight tang.

Enjoy Taleggio with light white wines for lunch or elegant Italian reds for dinner, savouring its intense, deep aroma and captivating creaminess. With aging, the delicate and buttery flavour develops slightly spicy notes, enhancing its complexity.

Cheesemaker: Carozzi Formaggi

Carozzi Formaggi, founded by Aldo Carozzi in 1960, is nestled in the heart of Valsassina, Italy.

Starting in Ballabio and later moving to Pasturo, Carozzi has grown over generations, establishing itself as a respected name in cheese production both in Italy and abroad. For over fifty years, Carozzi has combined traditional artisan skills with modern tastes, creating a wide range of unique, award-winning cheeses.

The lush green meadows, crisp air, and scenic beauty of Valsassina provide the perfect backdrop for producing exceptional cheeses.
