This raw ewe’s milk cheese is one of the best known and most ancient pecorini (pecorino, means 'a sheep's milk cheese' in Italian).
Thought by some to date back to the Bronze Age, Fiore Sardo is a stunning artisan cheese which is a firm staple of the Italian culinary tradition.
Made traditionally by Sardinian shepherds, Fiore Sardo is a hard cheese with a crumby texture, a piquant sweet flavour and a noticeable after bite.
You may also detect a slight smokiness in its flavour which comes from wood burning stoves in the huts where cheeses mature.
