Appenzeller "Extra" is an artisan raw cow's milk cheese produced in Switzerland.
A powerful fruity Swiss cheese with the rind washed with a secret brine consisting wine and spices. The black label Appenzeller is matured for a minimum of 6 months but often longer than that.
The wonderfully smooth texture is aromatic, sweet and nutty. It is fantastic both for cooking and snacking on with a glass of wine. Off-dry white wines are recommended or elegant reds.
A Cheese Fact
Did you know that there are 3 main varieties of Appenzeller? They can be distinguished by the colour of their label. The 3 varieties are Classic (silver label) 3-4 months old; Surchoix (gold label) 4-6 months old; Extra (black label) 6+ months old. Only the very best wheels get to become "Extra".

Due to the relatively small scale of our cheese and condiment producers, occasionally some cheeses and condiments may be unavailable and we will have to substitute them with similar products. Please state in the notes on the Cart page, if you do not wish to have any substitutions.
