Abbaye of St. Nicolas de Citeaux was founded 900 years ago, but it was only in 1925 that resident Trappist monks began to make cheese. It is rarely found outside Burgundy because of the very small scale of its production. Made with raw cow's milk, it is sweet, nutty, and creamy on the palate with a somewhat farmyardy aroma.
Beaujolais or red Burgundy will make a nice pairing, so will aromatic white wines of Alsace.
