A stunning ewe's milk cheese from the Pyrenees made by monks.
This extremely rare cheese is produced by hand by Benedictine monks in the Western France. The incredibly rich and wholesome milk for its production comes the local red-nosed Manech ewes.
After the cheese is made, it is matured for 4-10 months when it develops crusty grey-ish brown rind, a dense and smooth paste, and a sweet nutty and caramelly flavour.
Enjoy with elegant red wines with moderate tannins.
