Complement with: membrillo (quince paste) or bittersweet figs, rosemary olive biscuits



An outstanding but relatively unknown cheese that is an excellent alternative to Manchego. In Castile and Leon where it’s made shepherds particular attention to the quality of ewe’s diet and move them all year around to find the best possible feed. The resulting milk and cheese are high quality and very full flavoured and lingering. Nutty and sheepy notes prevail. The best parings will be with red wines, especially red Rioja.
