One of a few goats’ milk cheeses that have been made in this region of France since the 8th century. After the cheese is made it is covered with vegetable ash to help it develop a natural rind. The young cheese is snowy-white, fluffy in texture and tangy as for flavour; with age however its paste becomes a touch ivory and the character gets more sophisticated – nutty, creamy and lingering. Enjoy with crispy white wines from the Loire.
