This highly seasonal delicacy is sought after by cheese connoisseurs the world over. It’s only available from October until the end of March. The raw cows’ milk cheese comes packed in a wooden box, where it’s also wrapped in a strip of spruce bark which gives the cheese its incredible woody/sprucey flavour. Enjoy raw or baked with aromatic white wines such as Gerwurztraminer, Riesling or Vin Jaune or medium-bodied reds.
