This is Rachel‘s little sister , the more famous cheese from the White Lake Co.  The main difference (apart from the size) is that it’s made from raw milk using traditional rennet. The resulting flavour is even more complex and long. The rind is washed with Somerset Cider brandy during maturation giving the cheese a slightly pungent aroma and almond-y notes in flavour.

Enjoy with elegant red or rosé wines.
