This raw ewe’s milk cheese is one of the best known and ancient Pecorionos. It’s even thought by some to date back to the Bronze Age. Fiore Sardo is a hard cheese with a crumby texture, a piquant sweet flavour and a noticeable sharp bite. You may also detect a slight smokiness in its flavour which comes from wood burning stoves in the huts where cheeses mature.
