The milk for this cheese is sourced from the farm’s own herd and is turned into cheese by a team of skillful cheese makers entirely by hand. Designed to be eaten as a relatively young cheese (12-14 weeks old), Cornish Blue is rather different to other traditional English blue cheeses such as Stilton or Dorset Blue. The texture is semi-firm, occasionally going on firm, and the bite from the blue mould is on the medium side.
