Chabichou du Poitou is a wee barrel of a cheese made from raw goat’s milk and is a great example of the “classic” French goats’ milk cheeses. Underneath its crinkly ivory skin we find ivory-coloured firm paste that is somewhat crumbly but still moist enough to melt in the mouth. The taste is fresh and tangy when the cheese is young, and it becomes sweeter and nuttier as the cheese matures. Chabichou pairs beautifully with wines from the Loire Valley or any other light crispy white wines.
