A powerful fruity Swiss cheese with the rind washed with a secret brine consisting wine and spices. The black label Appenzeller is matured for a minimum of 6 months but often longer than that. The wonderfully smooth texture is aromatic, sweet and nutty. It is fantastic both for cooking and snacking on with a glass of wine. Off-dry white wines are recommended or elegant reds.

Did you know that there are 3 main varieties of Appenzeller? They can be distinguished by the colour of their label. The 3 varieties are Classic (silver label) 3-4 months old; Surchoix (gold label) 4-6 months old; Extra (black label) 6+ months old. Only the very best wheels get to become “Extra”.
