A powerful fruity Swiss cheese with the rind washed with a secret brine consisting wine and spices. The purple label Appenzeller is matured for a minimum of 9 months but often longer than that. The wonderfully rich texture is aromatic, sweet and nutty with a wonderful crunch of protein crystals. It is fantastic with a complex glass of red or white wine.

Did you know that there are 3 main varieties of Appenzeller? They can be distinguished by the colour of their label. The 3 varieties are Classic (silver label) 3-4 months old; Surchoix (gold label) 4-6 months old; Extra (black label) 6+ months old.

But there is a secret 4th variety as well! And that’s “Edel Wurzig”. Extra mature – extra delicious.
